Sweet and healthy infusion of Kenyan tradition

Tea is one of the most popular drinks in the world and even in Kenya, which is among the top ten producers, it is a much loved and enjoyed tradition at various times of the day.
There are different ways to prepare it but chai ya tangawizi, or ginger tea, is the most common and appreciated. On the coast it is aromatised by adding other spices and often accompanied with madazi and kaimati.

Ingredients

2 cups of water

2 tablespoons of Kenyan black tea leaves or two tea bags

2 pieces of freshly peeled and sliced ginger

1 cinnamon stick

6 crushed cardamom seeds

1/2 cup caster sugar ( or honey )

3 cups of milk

Instructions

In a deep pot, bring the water to a boil. Reduce the heat to a minimum and add tea, ginger, cinnamon, cardamom and sugar. Boil over low heat for 3 minutes. Pour in the milk and continue to boil for another two minutes.

Sieve the drink with a fine-meshed strainer and serve hot.
